Ingredients

For the cake you will need:

For the Cheese Layer:

  • 1 cup Philadelphia cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup whipping cream

For the jelly you will need:

  • 4 ripe mangoes, peeled and pitted (or 2 cups mango puree)
  • 1 cup granulated sugar
  • 1 1/2 cups water
  • 2 tablespoons unflavoured gelatin powder (or agar-agar for a vegetarian option)
  • 1 teaspoon pure vanilla extract

Let's dive right in!

Preparation of the cake:

  1. Preheat your oven to 170°C
  2. In a bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt and 1/2 cup of condensed milk
  3. In another bowl, whisk together 1/2 cup of room temperature unsalted butter and 1 cup of granulated sugar until light and fluffy

  3. Slice the cooled cake horizontally into two even layers
  4. Spread the cheese mixture on the bottom cake layer
  5. Arrange halved strawberries over the cheese layer
  6. Carefully place the second cake layer on top

Mango Jelly Layer:

  1. Blend 4 peeled and pitted ripe mangoes until smooth.
  2. In a saucepan, combine the mango puree, 1/2 cup of granulated sugar, 1 cup water, and 1 teaspoon vanilla extract. Stir over medium heat until sugar is dissolved.
