Ingredients
For the cake you will need:
- 2 cups all-purpose flour

- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup condensed milk
For the Cheese Layer:
- 1 cup Philadelphia cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup whipping cream
For the jelly you will need:
- 4 ripe mangoes, peeled and pitted (or 2 cups mango puree)
- 1 cup granulated sugar
- 1 1/2 cups water
- 2 tablespoons unflavoured gelatin powder (or agar-agar for a vegetarian option)
- 1 teaspoon pure vanilla extract
Let's dive right in!
Preparation of the cake:
- Preheat your oven to 170°C
- In a bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt and 1/2 cup of condensed milk
- In another bowl, whisk together 1/2 cup of room temperature unsalted butter and 1 cup of granulated sugar until light and fluffy

- Carefully place the second cake layer on top
Mango Jelly Layer:
- Blend 4 peeled and pitted ripe mangoes until smooth.
- In a saucepan, combine the mango puree, 1/2 cup of granulated sugar, 1 cup water, and 1 teaspoon vanilla extract. Stir over medium heat until sugar is dissolved.
- Sprinkle 1 tablespoon of gelatin over the mixture, and stir until gelatin is completely dissolved.
