Welcome back to my blog! Today, I want to tell you my secret recipe for an extremely simple yet tasty dessert that you'd go bananas without!
That's right! It's a banana, walnut and coconut mini roll cake. Believe it or not, this dessert takes less than 10 minutes to prepare and set in the fridge.
How, you ask? Allow me to tell you...
Ingredients (to give you roughly 20 bite-size pieces):
- 2 bananas
- 2 cups of sugar
- 10 vegan or non-vegan biscuits or the equivalent amount in sweet bread crumbs
- 2 tsp lime juice
- A small amount of coconut powder
... And if you like you can add ground walnut or hazelnut
Now follow in my footsteps:
- Blend the bananas with sugar and lime juice
- Place the mixture in a pan and add a 1/2 a cup of water and bring to boil
- Whisk the solution gently until everything is mixed and wait until there is no water remaining in the pan (but take care so that the mixture doesn't stick to the pan and burn)
- Remove from the heat and leave the mixture until it is no longer hot
- Add the biscuits or sweet bread crumbs (plus ground hazelnut or walnut if you're not allergic!) to the mixture and knead like a dough well until it's firm and in one piece
- Now lay the cling film on the surface you're working on and pour the almond flake and coconut powder on the cling film
- Place the mixture on top of the cling film
- Roll up the mixture until the coconut powder and almond flakes stick to the outside surface of the roll
- Put the roll in the fridge for at least 2 hours until it sets
- Once you take it out of the fridge, separate the cake from the cling film
- Cut the set roll into small pieces (roughly 20 pieces)
