If you ever thought Tahini and sweetness don't go together, you've been wrong all this time! Now, add pistachios and edible rose petals to it... and you may just find yourself in heaven!

This type of rose petals from a flower called Gol-e-mohammadi, has been used for centuries in Iran to extract what is one of the most natural fragrant ingredients, rose water. In addition to rose water, the petals themselves are used (talk about eliminating waste!) for both decorative and eating purposes.

And the end result...

So, how is it made, you're wondering?

Here's a step-by-step guide to making this delicious dessert:

Ingredients:

1) One cup of icing sugar

2) One cup of powdered milk

3) One cup of Tahini

Steps:

  • Pass the icing sugar and powdered milk through a sieve to ensure they are well-mixed and there are no lumps of powder
  • Add the Tahini next and knead until you have a firmed but smooth dough
  • Choose a mould (any size and shape you like)
  • Sandwich the dough between two sheets of cling film and roll it to a thickness of 2-3cm (this is not too strict and is up to your discretion) to the shape and size of the mould
  • Transfer the rolled dough with the cling films still on each side to the mould
  • Remove the top cling film and decorate with pistachio and rose petals or buds
  • Place the mould with the dough in the fridge for approx. 3-4 hrs until it's firm
  • After this length of time, remove from fridge and cut up in small rhombic or cubic pieces
  • Et voila! Bon appetit!
